01 / ABOUT THE PLACE

About this place

Precise heat control shows the moment a knife cuts in, accompanied by the deep perfume of traditional sauces. Situated in Minami-Aoyama, L'ESSOR is led by Chef Guofei Wei, an alumnus of Ginza Maxim's de Paris, celebrating the essence of authentic French gastronomy. A well-known house specialty, citrus-scented salmon mi-cuit, arrives tender and moist, accented by the pop and salinity of salmon roe marinated in Champagne. For the main course, guests can choose a Rossini arrangement of Wagyu tenderloin, foie gras, and truffle, brought together by a rich sauce that draws out the meat's savory depth.

Courses unfold gracefully from seasonal starters to fish and meat courses. The fish course featuring pan-roasted rockfish offers plump, tender flesh, framed by a vibrant parsley coulis, stewed spring cabbage, and wild vegetable beignets for light textural contrast. Meat selections draw on classic technique tailored to each ingredient, including slow-braised beef cheek in red wine and roasted Yezo deer.

The meal finishes on desserts such as the Maxim's de Paris-heritage Napoleon pie or a refreshing crème d'Anjou. Thoughtful wine pairings complement the menu, with non-alcoholic sparkling options available for diners avoiding alcohol. The calm dining room also includes private rooms, providing a comfortable setting for celebrations or a relaxed lunch treat.
